Ingredients
Olive Oil
½ a yellow onion, small diced
2 teaspoons chili powder
1 teaspoon cumin
½ teaspoon salt
5 cloves of garlic, chopped
3 cups Pinto Beans
1 can (4 oz) mild green chiles
Juice from one lime
1 cup of sweet corn
12 flour tortillas
Directions
Preheat oven to 400, coat baking sheet with cooking spray.
Sauté onions in olive oil for 5 minutes. Add chili powder, cumin, salt and garlic and cook for another few minutes and turn off heat.
Mix beans, chilis and lime juice in bowl. Add sautéed onion mix and corn and mix.
Add filling to warmed flour tortillas, about 2 heaping Tablespoons per tortilla.
Coat with cooking spray and make for 10 minutes or until brown.
